### Is the bitterness and peppery taste normal?
Yes. Bitterness and a peppery throat sensation are the two most reliable indicators of high polyphenol content in olive oil. Oleocanthal (which creates the peppery, throat-catching sensation) and oleuropein (which creates bitterness) are both potent antioxidants. Their presence indicates a fresh, high-quality, health-promoting olive oil.
