How we test

Two methods, one oil

NMR reads the whole oil and gives total polyphenols. HPLC counts the individual compounds and is the method behind the EU health claim. They disagree by design: the same Ultra High Phenolic harvest reads 1,046 by NMR and 874 by HPLC. We publish both.

Before a harvest ships

Free acidity inside our 0.4% ceiling. A residue screen across 200+ compounds at an IOC-recognized lab. Blind tastings, with sign-off by an IOC-certified sommelier. A review by the medical advisory board. Reports correspond to harvests, not sub-batches: the oil you receive comes from the tested harvest on this page.

Where these oils sit

The EU allows a heart-health claim at 250 mg/kg. Most supermarket bottles are 50 to 100 by the time you buy them.

About this page

What the terms mean
Polyphenols
The family of compounds behind olive oil's health benefit. The number on a label is their total.
Hydroxytyrosol
The olive polyphenol with the most human research behind it, and the one the EU claim is written around.
Oleocanthal and oleacein
The pair behind the peppery catch and the bitter note. Reported in mg/kg on both reports.
NMR
A whole-oil method that measures total polyphenols. The University of Athens runs ours.
HPLC
Separates and counts the individual compounds. The EU claim is assessed on this method.
mg/kg
Milligrams per kilogram of oil. A 20 g serving of a 1,000 mg/kg oil carries about 20 mg.
