High Phenolic Olive Oil, Explained: What the Numbers Mean and How Much Is Enough
You are holding a bottle that says 800 mg/kg. The one next to it says 600, and a website somewhere says 1,200. Which is good? Which is better? Most articles about high phenolic olive oil never answer that, because they skip three things: what the number counts, how it was measured, and where enough begins.
We test our own oils two ways every harvest and publish the results, and we answer these questions for customers and store buyers every week. What follows is the full answer, written so you do not need a chemistry degree to use it. Every number comes from a published study or from our own lab reports, and we say which.

What "high phenolic" means
Polyphenols are the compounds that make good olive oil taste bitter and peppery. The olive makes them to protect itself, and a small amount ends up in the oil: a few hundred milligrams per kilogram, which is less than a tenth of one percent of the bottle. That tiny fraction is behind nearly every health finding about olive oil. New to polyphenols? Start with our guide to what polyphenols are.
The words extra virgin tell you nothing about polyphenols. The grade is based on acidity, oxidation and a taste test, and it sets no polyphenol minimum. An oil can be legally extra virgin at 50 mg/kg, and plenty are. A 2017 review put the typical range at roughly 100 to 600 mg/kg, depending on the olive variety, the climate, how ripe the fruit was and how it was processed (Echeverría 2017). Supermarket oils cluster at the low end.

Because the grade says nothing, the industry made its own scale. These are its rungs, from the bottom up, with a note on where the bottles around you sit.
- Under 50 mg/kg: never extra virgin. Refined olive oil, sold as light, pure or plain olive oil, has been through heat and chemical refining that strips nearly all of its polyphenols. Some bottles labeled extra virgin fail the grade's own tests and land here too. Our guide to telling real olive oil from the rest covers how to spot them.
- 50 to 100 mg/kg: supermarket extra virgin by the time you buy it. Most supermarket extra virgin starts around 100 to 250 at the mill, then spends a year or more in shipping, warehouses and shelves. Lose 3% to 6% a month for that long, and a bottle that left the mill at 150 reaches you at roughly 50 to 100. Most US supermarket oil realistically sits here.
- 250 mg/kg is the health claim floor. In Europe, an olive oil can legally say its polyphenols help protect blood lipids (the fats in your blood, LDL included) from oxidative stress, but only if a 20 g serving, about a tablespoon and a half, delivers at least 5 mg of hydroxytyrosol and its related compounds. Do the math and that works out to 250 mg/kg. Below it, an oil cannot make the claim at all. Our EFSA 2011 breakdown has the details.
- 500 mg/kg is where high phenolic starts. Double the claim floor, and roughly the point where the bitterness and the peppery catch in your throat become hard to miss. Our High Phenolic oil is built to this line.
- 1,000 mg/kg is ultra high phenolic. Four times the floor. Few oils get there, because it takes an early harvest, the right olive variety and fast, cold processing. Our Ultra High Phenolic oil tests at 1,046 mg/kg on the current harvest.
One more thing the chart shows. The trial the EU claim rests on, called EUROLIVE, tested three oils at 2.7, 164 and 366 mg/kg. Its "high" oil would sit in the middle of today's supermarket range. Keep that in mind when a label calls 350 mg/kg high.
How much is enough?
It is the question we get most. The short answer: 1,000 mg/kg or more at pressing for the oil you take daily by the spoon, and 500 or more for the oil you cook with. Both clear the EU claim dose with room to spare. The next few paragraphs show where those numbers come from, and why a bigger number is not always a better bottle.
What the studies used
The human studies did not use exotic oils. EUROLIVE gave 200 healthy men about two tablespoons a day for three weeks, and the more polyphenols the oil had, the better the results: HDL, the good cholesterol, went up, and oxidized LDL went down (our EUROLIVE breakdown has the numbers). A 2019 review that pooled 26 trials found the same pattern. The oils in those trials mostly ran 300 to 600 mg/kg, taken at one to three tablespoons a day. So the evidence comes from oils in that range, taken by the spoonful, every day.
How much oil you need at each level
The fairest way to compare oils is to ask how much of each you need to reach the 5 mg claim dose. The Olivea rows use our lab reports. The other two use the standard 250 mg/kg assumption.

At the claim floor you need a tablespoon and a half a day, with no room to spare, because a few months on the shelf drops the oil under the line. At 500 mg/kg a tablespoon gets you there twice over. At 1,000 mg/kg a teaspoon does it, which is why people who take olive oil daily tend to land here. Our hydroxytyrosol dosage guide has the per-day math.
Is more always better?
Not according to the studies. No trial has compared a 1,200 mg/kg oil against a 600, so a very high number is not proof of a bigger effect. What a higher number does change is practical.
- It lasts longer. Polyphenols fade in the bottle. In an 18-month study of 21 oils kept at room temperature, total polyphenols fell 40% to 70%. An oil that starts at 1,000 mg/kg is still above the claim floor two and a half years later. One that starts at 500 holds for about a year. One that starts at 300 drops under the floor within months. We worked through the numbers in how to store olive oil to keep its polyphenols.
- The dose is smaller. A teaspoon instead of a tablespoon and a half means 42 calories a day instead of 177 for the same 5 mg, and fewer bottles a year.
- You can taste whether it is fresh. At 1,000 mg/kg the bitterness and the sting are unmistakable, so every spoonful tells you the oil still has what the label promised.
Past about 1,000 mg/kg the returns flatten out, and other things start to matter more than another 200 mg/kg on the label.
Why 1,500 is not automatically better than 1,100
The number stops being simple at this point. The figure on a label was measured once, on one sample, by one method, usually right after pressing. Between that test and your kitchen, a lot happens. The oil sits in a warehouse, then on a shelf, in whatever light and heat it finds there. The method may not match the one used for the bottle next to it. And once you open the bottle, the clock speeds up. Two oils that read 1,500 and 1,100 at the mill can easily trade places by the time you pour them, and you would never know.
Chasing the biggest number has a cost, too. The oils that test highest often come from tiny early-harvest lots that sell out fast at a premium, so you can end up paying a lot for polyphenols that have partly faded by the time you enjoy the bottle. High numbers are a fine thing, and we chase them ourselves every harvest. They are one part of the picture.
So use the number to get an oil in the door, and use everything else to choose between the oils that pass. Our advice, and the way we built our own range: keep an ultra high phenolic oil, 1,000 mg/kg or more at pressing, for your daily spoonful, and a high phenolic oil, 500 or more at pressing, for cooking and everything else. Buy dark glass, look for the harvest date, finish the bottle within a couple of months, and enjoy it. An oil you like and pour every day does more for you than a trophy bottle you ration.

And if potency is what you are after above all, that is what the capsule is for. What the individual numbers mean
A full lab report lists several compounds, and the names look intimidating. They are not. In one line, hydroxytyrosol is the one the health claim is written on, oleocanthal is the sting, oleacein is the bitterness, the aglycones are the raw material for all of them, and tyrosol is the sturdy one. The table says what each number tells you when you are choosing a bottle.

So there are two groups. Oleocanthal, oleacein and the aglycones are big, fragile and full of flavor: they are what you taste, and what fades first. Hydroxytyrosol and tyrosol are small and sturdy. You want both groups in the bottle, and the oil itself matters too: a 20-person trial gave the same 5 mg of hydroxytyrosol in different foods and found the most reached the blood when it came in extra virgin olive oil. If you read only one line on a report beyond the total, read oleocanthal plus oleacein. It is the best single sign of an early harvest. Why two labs give the same oil different numbers
Total polyphenols can be measured three ways, and the three methods disagree. It is the single most important thing to know when you compare two labels. We run two of them on every harvest, HPLC at an IOC-recognized lab in Athens and NMR at the World Olive Center for Health, and publish both. On the current Ultra High Phenolic harvest, the same oil reads 850 mg/kg by HPLC and 1,046 mg/kg by NMR, a gap of about 20%. Our own certificates also show the timing effect. That harvest was pressed on 10 October 2025. The HPLC test ran about seven weeks later and the NMR test about ten weeks later, so both numbers describe an oil that had already spent weeks in the tank, and at pressing both would have read higher. So a brand quoting 1,000 by NMR and a brand quoting 700 by HPLC may be selling very similar oils. Compare numbers only when the method matches, and treat a number with no method attached as marketing.
Each method works differently.
- Folin-Ciocalteu is an old color test. It reacts with almost anything antioxidant-like, so it reads high and cannot tell the compounds apart.
- HPLC separates the compounds and counts them one by one. It is the official reference method and the basis of the EU claim. A certificate that says "biophenols" is using it.
- NMR reads the big compounds directly in the raw oil, with no extraction step. The method was developed at the University of Athens (Karkoula 2012).
Timing matters as much as method. An oil tested at the mill in November will read higher than the same oil tested off a shelf in July, for the reasons the storage studies show.
Two more lines on the report
Free acidity tells you how the fruit was handled. It is set at the mill and barely changes afterward. The extra virgin limit is 0.8%; our release target is 0.4% or lower. Peroxide value and the two UV readings (K232 and K270) track oxidation, and these do move with light, heat and time. They are the numbers that eventually push an old or sun-exposed oil out of extra virgin territory. Fresh, well-kept oil sits far under all three.
What these polyphenols do
The human research supports a short list of statements, and we use the regulators' careful wording for each.
- They protect blood lipids from oxidative stress. It is the one claim the EU has approved, and there is a dose response behind it: in EUROLIVE, the more polyphenols in the oil, the more oxidized LDL fell and HDL rose. A 2004 crossover trial and a 2006 after-meal study found the same pattern.
- The effect holds up when you pool the trials. Across the 26 randomized trials in the 2019 meta-analysis, high-polyphenol olive oil beat low-polyphenol olive oil on oxidized LDL, total cholesterol, HDL and a marker of fat oxidation, with the same amount of fat in both. A separate network meta-analysis ranked high-phenolic extra virgin oil first among four olive oil types on those outcomes.
- Higher polyphenol levels go with lower inflammation markers. In a large European cohort, people with more polyphenols in their blood, hydroxytyrosol included, had 29% lower odds of elevated hsCRP, a common inflammation marker. An association, not proof of cause.
- Hydroxytyrosol on its own has been tested in people. One 12-week randomized trial found daily hydroxytyrosol improved complex attention in adults aged 51 to 82, and another found it moved seven biomarkers of aging and inflammation. Both are early studies, and both breakdowns explain the limits.
- They protect the oil itself. Polyphenols are the oil's own antioxidants, so an oil with more of them goes rancid later.
The limits are real. The studies do not show that more is better past about 600 mg/kg, polyphenols do not replace anything a doctor has prescribed, and a number on a label only matters if the oil is fresh and you take it every day.
What the number cannot tell you
Two oils can print the same number and be very different products. Six things decide whether the label is still true by the time the oil reaches your kitchen:
- The harvest date. Polyphenols fall roughly 3% to 6% a month at room temperature. An oil tested at 700 in November and bought the next September has lost a big share of that.
- The packaging. Dark glass or tin. Clear glass and plastic lose polyphenols fastest, and plastic can push an oil out of extra virgin chemistry within a month of daily use.
- The variety and the origin. Some olive varieties never reach high phenolic levels no matter where they grow. Single origin means the number belongs to one grove and one harvest.
- The test method and the test date. HPLC or NMR, at the mill or off the shelf.
- The acidity. A low number is the fingerprint of careful handling, and careful handling is what puts polyphenols in the bottle.
- The price per dose. A $45 bottle and a $12 bottle can be closer per dose than they look, and the calorie gap is wider than the dollar gap.

How to read a label and a lab report in a minute
- Find the total and the method together. NMR numbers run higher than HPLC numbers for the same oil. A number with no method cannot be compared to anything.
- Find hydroxytyrosol and derivatives per 20 g. 5 mg is the claim. Above 10 mg means a tablespoon clears it twice.
- Find oleocanthal and oleacein. A healthy pair means early harvest and a fresh sample. If they are missing, it is fair to ask why.
- Find the harvest date and the test date. Both of them.
- Check free acidity. Under 0.8% is extra virgin. Under 0.4% is careful handling.
- Taste it. Bitterness on the tongue is the aglycones and oleacein. The sting at the back of the throat is oleocanthal, and it lands there because the receptor it triggers is concentrated in the throat (Peyrot des Gachons 2011). An oil with neither has lost what the label describes.

What is high phenolic olive oil?
Extra virgin olive oil with an unusually high level of polyphenols, the bitter, peppery antioxidant compounds behind most of the human research on olive oil. No law defines the term. By convention, 500 mg/kg and up is called high phenolic and 1,000 mg/kg and up is ultra high phenolic. The EU health claim floor is 250 mg/kg, and most supermarket extra virgin oils sit near or below it.
What is a good polyphenol count in olive oil?
For the oil you take daily by the spoon, 1,000 mg/kg or more at pressing. A teaspoon reaches the EU claim dose and the oil stays above the claim floor for years. For cooking and everything else, 500 mg/kg or more, which still clears the claim twice in a tablespoon. Below 250 mg/kg an oil cannot carry the claim at all. Whatever the number, look for a harvest date and dark glass.
Is a 1,500 mg/kg olive oil better than a 1,000?
Not necessarily. The label number was measured once, usually at pressing, and every month of storage, light and heat lowers it. The test method matters too: the same oil reads about 20% higher by NMR than by HPLC. No trial has compared oils that high against each other. Start with 1,000 mg/kg or more at pressing for daily use, keep it dark and cool, finish it within a few months, and enjoy it. That does more for you than chasing the biggest number.
How much high phenolic olive oil should I take a day?

Oleocanthal is a big, fragile compound that causes the throat sting and blocks the same enzymes as ibuprofen in lab work. Hydroxytyrosol is the small, stable compound the EU claim is written on, released from oleacein and the aglycones as you digest the oil. Oleocanthal tells you how early the fruit was picked and how fresh the oil is. Hydroxytyrosol tells you whether a serving reaches the claim dose.

- High phenolic is a convention, not a law. The anchors are 250 mg/kg (the EU claim floor), 500 (high phenolic) and 1,000 (ultra high phenolic).
- The trials used 300 to 600 mg/kg oils by the tablespoon. 500 sits inside that range; 1,000 gets you a smaller dose and a longer shelf life.
- The label number is only where you start. Time, light, heat and the test method all move it. Start with 1,000 or more at pressing for your daily spoon and 500 or more for cooking, keep it dark and cool, and enjoy it. For potency alone, the capsule.
- Read the compounds: hydroxytyrosol and derivatives per 20 g for the claim, oleocanthal plus oleacein for freshness and harvest timing.
- A total with no method cannot be compared. HPLC and NMR differ by about 20% on the same oil.
- Harvest date, packaging, variety, method, acidity and price per dose decide whether the label is still true.
