What Makes an Olive Oil High Quality? 8 Things the Polyphenol Number Doesn't Tell You
The question we hear most from buyers, and from customers comparing two bottles, goes like this: this other brand lists a slightly higher polyphenol number, so is it a better oil? Sometimes it is. Often two labels 100 mg/kg apart describe oils that are equivalent on that measure, and the things that separate them are printed somewhere else on the bottle, or on a certificate, or nowhere at all.
The polyphenol figure is the right place to start, and our high phenolic olive oil explainer covers how to read it. A high quality olive oil is a system with eight checkable parts. Seven of them protect the polyphenols, and each comes with the study that backs it. The eighth is the reason to bother with the other seven.

Start with the number, then check three things about it
A polyphenol figure can mislead in three ways, and all three can be checked. The method: HPLC and NMR count differently, and on our own oil the same harvest reads 850 mg/kg by one and 1,046 by the other. The test date: an oil tested at the mill has not yet started losing what a bottle on a shelf has been losing for months. The storage: in an 18-month study of 21 Coratina oils in dark glass at room temperature, total polyphenols fell 40% to 70% (Antioxidants 2025). A number without a method, a test date and a harvest date describes an oil that may no longer exist in that bottle. The eight checks below tell you whether it does.
1. A harvest date on the bottle
Every month a sealed bottle spends at room temperature costs roughly 3% to 6% of its total polyphenols, and the fragile compounds that give the oil its bite go first. A best-by date is set by the bottler, often two years after bottling, and says nothing about when the fruit was pressed. A harvest date does. Two oils with identical numbers on the label, one pressed last November and one the November before, are different oils, and only the harvest date shows it.
What to look for: a harvest month and year on the bottle, with a lab test date near it if the producer publishes one. Skip anything that shows only a best-by. Buy a size you will finish in two or three months, because an opened bottle used daily loses polyphenols about twice as fast as a sealed one; we cover that in how to store olive oil to keep its polyphenols, and our freshness guide covers the smell and taste checks for a bottle you already own.
2. Early harvest, and why it costs more
Polyphenols peak while the fruit is still green and fall as it ripens, while the oil content of the fruit keeps rising. Both halves of that have been measured. Spectroscopic tracking of olives through development shows oil accumulating as the fruit grows and phenolic compounds declining through ripening (López-Sánchez 2010). A season-long study of an Arbequina orchard found total phenols and oxidative stability rising to a peak early in ripening and then declining (Benito 2013). The NMR survey of 175 commercial oils found that high oleocanthal and oleacein tracked early harvest (Karkoula 2012).
A grower who picks in October gets less oil per tree, more bitterness and more polyphenols. A grower who waits until December gets more oil and a milder product that scores lower on every phenolic measure. The early pick costs more per bottle because there is less oil in the fruit to press, so the price reflects what is in the oil rather than how much of it there is. What to look for: the words early harvest backed by an October or early November harvest date, a green, bitter, peppery taste, and a healthy oleocanthal plus oleacein line on the certificate.
3. Dark glass or tin

A container either blocks light and oxygen or admits them, and the studies measure the difference. A 24-month study of an Umbrian oil stored under light and in the dark found that light accelerated oxidation, with peroxide values across the study running from about 5 to 24 meq O2/kg, past the extra virgin limit of 20 (Blasi 2025). A 2026 study that simulated household use, drawing 75 mL a day for 40 days, found total phenols fell 11% in bag-in-box and 12% in tin, and 26% in plastic, where peroxides crossed the legal limit after 30 days (Sordini 2026). Plastic is permeable to oxygen and light, and it brings its own chemistry problems, which we cover in why olive oil and plastic don't mix.
What to look for: opaque dark glass or tin, a cap that seals, and a size you will finish.
4. The variety and the origin
Variety sets the ceiling. In a two-year Greek storage study, five varieties from the same country started anywhere from 251 to 926 mg/kg, and the authors attributed the spread to variety, ripeness and extraction system (Kotsiou 2016). The 175-oil NMR survey found that some varieties produce low oleocanthal and oleacein wherever they are grown and whenever they are picked (Karkoula 2012). Koroneiki, Coratina, Picual and the Olympia variety we use for our ultra high phenolic oil can all reach the top of the ladder; many popular mild varieties cannot, however carefully they are made.
Origin is about traceability. Excellent oil is made in Greece, Spain, Italy, California and elsewhere, and a country name on its own is no quality mark. Single origin means the number on the label belongs to one grove and one harvest, while a blend averages tankers from several countries into one figure. A blend may be perfectly sound, but nothing on it can be traced back to a grove. Our single origin roundup lists oils that name theirs.
What to look for: a named variety, a named region, and single origin or single estate on the label. If the label says product of EU or lists three countries, the polyphenol number is an average of oils you will never see separately.
5. How it was made and held before the bottle
Oil starts losing polyphenols when it meets oxygen, light and warmth, and a producer decides how much of that happens before you buy. The steps that matter: milling within hours of picking, extracting cold, and holding the finished oil in stainless steel under an inert gas at a controlled temperature until it is bottled. A study that followed an oil from grove to storage found a nitrogen headspace to be a discriminating factor in keeping its functional properties (Smeriglio 2019), and every long storage study agrees that cold and dark are the other two levers. What to look for: cold extracted or cold pressed and milled within hours on the label, and a producer who can tell you how the oil is stored between harvest and bottling. Most cannot, because most do not control it.
6. The freshness chemistry on the certificate
Three lines on a certificate of analysis describe the oil's condition rather than its polyphenols.
- Free acidity is the share of free fatty acids released by enzymes in damaged, overripe or delayed fruit. It is set at the mill and barely moves in storage: in the Coratina study it stayed well under the limit at both temperatures for 18 months. The extra virgin limit is 0.8%. Our release target is 0.4% or lower. Low acidity does not make an oil healthier by itself; it is the fingerprint of sound fruit handled fast, which is the same handling that puts polyphenols in the bottle.
- Peroxide value measures primary oxidation. The limit is 20 meq O2/kg. It rises with light, heat and time, and it is the number that pushed the light-stored oil in the Blasi study and the plastic-stored oil in the Sordini study out of the extra virgin category.
- K232 and K270 are two ultraviolet readings that track primary and secondary oxidation. The limits are 2.50 and 0.22. Fresh oil sits far under both.
The limits come from the International Olive Council and are written into EU law (Regulation 2022/2104). What to look for: a dated certificate showing all three, from a named laboratory. Kitchen folklore does not substitute for it. The refrigerator test tells you nothing, as we explain in the olive oil fridge test, and neither does color.
7. Price per dose
Price is the seventh check, and the one buyers most often get wrong, because the unit is wrong. Nobody consumes a bottle. People take a dose, and the EU claim defines one: 5 mg of hydroxytyrosol and its derivatives. Divide a bottle into those doses and the comparison changes.

The supermarket rows use the 250 mg/kg proxy for the claim, because most such oils publish no hydroxytyrosol figure, and their prices are illustrative. The Olivea rows use our published lab numbers and current 500 mL prices. Per 5 mg dose, our $45 oil costs about half what a $12 oil costs, and the calorie gap is wider than the dollar gap: 42 calories a day against 295 for the same dose.
A $12 oil can still be a sound product. For sautéing, a fresh supermarket extra virgin does the job, and our cooking oils roundup says so. If the reason you buy olive oil is the polyphenols, though, price per bottle tells you little, and a bottle with no polyphenol figure cannot be priced per dose at all.
8. It has to taste good, or none of this matters
Everything above is a way of protecting the polyphenols. Taste is the reason to bother. Olive oil is food, and a bottle you dread pouring sits in the cabinet until the clock runs out on it, which loses every polyphenol it had more reliably than a warm shelf ever could.
The trade is real at the top of the scale. Bitterness and pungency come from the same compounds the health research is about, so a high number will always carry some bite, and that bite is a good sign. Past a point it stops being a sign and becomes the whole experience. An oil at 3,000 mg/kg that makes you choke is a supplement in a bottle, and a poor one, because you will not take it every day. If potency is the only goal, the capsule delivers 20 mg of hydroxytyrosol in a sealed dose without asking your palate for anything. The oil has a different job. It has to be something you want on bread, over vegetables, and in a glass on its own.
An olive oil sommelier evaluates every harvest we consider for that reason, alongside the laboratory. The lab tells us the oil is potent. The sommelier tells us it is balanced: bitter and peppery in proportion, green and fruity underneath, free of defects, and pleasant to take by the spoon. An oil has to pass both.
What to look for: taste before you commit to a case. A quality oil is bitter on the tongue and peppery at the back of the throat, and both sensations should be clean and short rather than harsh, with fresh, green, fruity aromas underneath. If a robust oil is more than you want, a rounder oil in the 500 to 600 mg/kg range is the better daily choice, because the bottle you finish is the one that does anything for you.

- Harvest date on the bottle, within the last year.
- Early harvest: October or early November pick, bitter and peppery.
- Dark glass or tin. No clear glass, no plastic.
- A named variety and a single named origin.
- Cold extracted, milled within hours, held under nitrogen before bottling.

FAQ: high quality olive oil
How can you tell if olive oil is high quality?
Look for a harvest date within the last year, an early harvest, dark glass or tin, a named variety and single origin, cold extraction with fast milling, and a dated certificate showing polyphenols with the method, free acidity under 0.8% and peroxide under 20. Then taste it: real quality is bitter on the tongue and peppery at the back of the throat. Color and the fridge test tell you nothing.
Is expensive olive oil worth it?
Measured per dose, usually yes, if you are buying it for polyphenols. A $45 oil at 1,046 mg/kg delivers the 5 mg claim dose in a teaspoon for about $0.47, while a $12 oil at 150 mg/kg needs 33 g and costs about $0.87 for the same dose. For cooking, a fresh supermarket extra virgin is fine. For a daily habit, the concentrated oil is the cheaper one.
Does single origin olive oil matter?
For traceability, yes. Single origin means the polyphenol number, harvest date and variety describe one grove and one harvest instead of an average of blended oils from several countries. It does not by itself guarantee a high number; variety and harvest timing do that. A blend cannot be checked, and a single origin oil can.
Is Greek olive oil better than Italian or Spanish?
No country makes better oil by default; variety, harvest timing and handling do the work. Greek Koroneiki, Italian Coratina and Spanish Picual can all reach the high phenolic range, and mild varieties from any country cannot. Treat the country as part of the traceability story and judge the bottle on the other seven checks.
Is glass or tin better for olive oil?
Both work, as long as the glass is dark. In a 40-day household use study, tin and bag-in-box lost 11% to 12% of total phenols while plastic lost 26% and crossed the peroxide limit within a month. In a two-year study, light exposure pushed peroxide values to 24 meq O2/kg, past the extra virgin limit. Pick opaque, seal it, and finish it within two or three months.
What acidity should extra virgin olive oil have?
The legal limit is 0.8% free acidity. Careful producers land well under it; our release target is 0.4% or lower. Acidity is set at the mill by fruit condition and speed, barely changes in storage, and measures something different from oxidation, which peroxide value and the K232 and K270 readings track instead.
If you skip everything else
- The polyphenol number is where you start. Method, test date and harvest date decide whether it is still true.
- Eight checks: harvest date, early harvest, dark glass or tin, variety and single origin, cold and fast processing with nitrogen storage, a dated certificate, price per dose, and a taste you want to pour again.
- Early harvest costs more because green fruit holds less oil and more polyphenols, and the price reflects it.
