You pour a spoonful of a good olive oil, swallow, and something catches at the back of your throat. It builds a second or two after the oil is gone. Some people cough. Most people are surprised, because nothing about a smooth green oil in a glass suggests a sting is coming.
The molecule behind it is oleocanthal. It forms when olives are crushed. Researchers have spent about twenty years working out why it stings, and why it stings in that one spot. If you have wondered whether the burn means your oil is strong, or stale, or too acidic, the answer starts with one compound and one receptor.

Why the burn lands in your throat
Most mouth irritants are felt all over the mouth. Chili heat, cinnamon and alcohol reach the tongue, the cheeks and the palate. Olive oil is different. The heat shows up almost entirely in the throat, just past the back of the tongue.
A 2011 study in the Journal of Neuroscience worked out why. Researchers at the Monell Chemical Senses Center showed that oleocanthal switches on one sensory receptor, called TRPA1. Inside the mouth, that receptor sits in the throat. It is not spread across the rest of the cavity. The team checked this two ways: they asked people where they felt the burn, and they stained human mouth and nose tissue to see where the receptor was. The two maps matched (Peyrot des Gachons 2011).
The same paper found that liquid ibuprofen works through that receptor too, and stings in the same place. That shared feeling is what started this research line. A sensory scientist noticed that fresh olive oil stung the way liquid ibuprofen does, and the enzyme work followed. We cover that story in the Beauchamp 2005 breakdown. Feeling something similar is a fact about receptors. It does not make olive oil a painkiller, or a reason to change any medication.
Bitter and peppery come from two different compounds

People use bitter and peppery as if they were one complaint. They are two sensations. Different molecules cause them, and you feel them in different places.
In 2003, a team pulled the polyphenols out of virgin olive oils and had a tasting panel try each one alone. Nearly all of them were bitter and drying. Only one gave a strong burn at the back of the throat. That one held deacetoxy-ligstroside aglycone, the compound we now call oleocanthal. Its close relative, from the oleuropein side of the family, was tested at the same strength. It gave only a slight burn or numbness, and people felt it more on the tongue (Andrewes 2003).
So bitterness on the tongue and the sting in the throat are two separate readings. One oil can be firmly bitter with a mild catch at the back. Another can seem gentle at first and then grab you on the swallow. Rate them one at a time. The cough test, and what it can tell you
Olive oil people love the cough count. A one-cough oil is respectable, a two-cough oil is serious, and a three-cough oil is a trophy. The rule is fun, and it points in the right direction. It also has a limit worth knowing.
Researchers at Penn State asked people to rate the burn from olive oil, ibuprofen and capsaicin over time. Within one person, the olive oil and ibuprofen ratings tracked each other closely, which fits the shared receptor. Between people, the ratings varied a great deal. The words differed too. Capsaicin was burning and hot. Ibuprofen was numbing and tickling. Olive oil shared traits with both (Bennett and Hayes 2012).
So your cough count measures the oil and your own sensitivity at once. Two friends can share a spoonful from the same bottle and disagree about how fierce it was. Both of them are reporting the truth. Use the sting to compare bottles for yourself. Use the certificate to compare bottles with anyone else.
On the official tasting sheet used by the International Olive Council, pungency and bitterness are good things. Panels score them on a scale, next to fruitiness. An oil can have a lot of bite or very little and still be certified extra virgin. The grade says the oil has no defects. It says nothing about how much oleocanthal is in it.

Before you judge a bottle, control the two variables that move the result. Warm the oil in your cupped hand for half a minute, because the bite comes through more strongly at body temperature than straight from a cool cupboard. Then swallow it. The receptor doing the work sits past the back of your tongue, so sipping and spitting hides the very thing you are trying to taste.

Which olive oils carry the most oleocanthal

Most oleocanthal searches are asking this, and one dataset answers it well. In 2012, the Pharmacognosy laboratory at the University of Athens published a way to measure oleocanthal and oleacein directly, by quantitative NMR. The team then ran it across 175 single-variety commercial oils from Greece and California.
The spread was enormous. Oleocanthal and oleacein each ran from undetectable to 355 mg/kg. The sum of the two, which the authors proposed as an index, ran from 0 to 501 mg/kg. Two results from that survey help you in front of a shelf. High oleocanthal and oleacein went with early harvest. And some olive varieties gave oil that was low in both, wherever they grew and whenever they were picked (Karkoula 2012).
Variety and harvest date do most of the work. Freshness decides how much survives to your kitchen. A bottle with no harvest date and no compound figures cannot be judged on any of that. Where our two oils land
We publish both testing methods every harvest, so you can see this play out on one farm. The figures below come from our 2025 to 2026 lab results.
The Ultra High Phenolic oil is Olympia variety fruit from Messinia, picked in mid-October, dry-farmed and hand-harvested. It reports 850 mg/kg of total biophenols by HPLC and 1,046 mg/kg of total polyphenols by NMR. A 20 g serving carries 20.92 mg of hydroxytyrosol and derivatives. The lab page calls the flavor bold, aromatic and peppery, which is what an early pick tends to give you.
The High Phenolic oil is Koroneiki fruit, certified organic, picked a few weeks later. It reports 587 mg/kg by NMR, 11.74 mg of hydroxytyrosol and derivatives per 20 g, and 196 mg/kg for oleocanthal and oleacein together. It is the rounder of the two, and the one most people reach for daily.
Both oils sit inside the range the Athens survey measured, and the later pick is the gentler one. The same pattern the 175-oil dataset found shows up in two bottles from one grove.
Why an oil that used to sting stops stinging
Oleocanthal is one of the larger and more fragile compounds in olive oil. Time works on it. So do heat, light, and the oxygen that enters every time you open the bottle. The bite an oil has in November is milder by the following September.
That leads to two useful habits. Treat the sting as a freshness reading, not only a harvest reading: a bottle that caught your throat in week one and slides past in month six has changed. What the sting is not
It is not acidity. The acidity figure on a label is free fatty acid content by weight. It is a freshness and handling grade, capped at 0.8 percent for extra virgin. It is not a pH reading, and a lower number does not mean a milder oil. We unpack that confusion in our article on olive oil and acid reflux.
It is not a defect. Oil that has gone off tastes flat, waxy or stale, closer to old nuts or cardboard. Rancidity takes the sting away. It never adds one. It is not a health measurement. The one authorized European claim in this area is written on hydroxytyrosol and its derivatives, at 5 mg per 20 g of oil, for helping protect blood lipids from oxidative damage. We explain that threshold in our EFSA 2011 breakdown. There is no authorized claim for oleocanthal. A sting tells you a fresh, early-picked oil is in the glass, which is a good sign for the polyphenols as a group. Why did my olive oil stop stinging?
Oleocanthal is large and fragile. It breaks down with time, warmth, light and repeated exposure to air. An oil bought in winter can lose much of its bite by late summer, especially if it lives beside the stove in clear glass. The change is real, and worth noticing, because the compounds you can taste fade first.
Is a peppery burn a sign the oil has gone bad?
The opposite. Oil that has oxidized tastes flat, waxy or stale, and the sting fades as it ages. A clean peppery finish on a fresh, fruity oil is a good thing in professional tasting. Panels score it alongside bitterness and fruitiness on the official sheet.
